Chewy Oatmeal Chocolate Chip Cookies

Ever since I was a kid, my favourite cookie flavour has been oatmeal chocolate ship. And the chewier the better.

Most people say that the key to a chewy cookie is the amount of moisture in the batter. And this is why I use all brown sugar when I make these chewy oatmeal chocolate chip cookies. I used to use about half granulated sugar and half brown, but one time when I ran out of granulated I used all brown and it was amazing. I’ve never looked back.

The other thing, and this may be the MOST IMPORTANT part, is to take them out before they look done. When the edges start to look just slightly browner than the rest of the cookie, take them out of the oven. The cookie may look a bit raw, but trust me. They’ll continue to bake for a minute or two once you take them out, and this is when the magic happens. If you leave them in too long they won’t be as chewy.

One of the great things about this recipe is how incredibly easy it is. You mix everything together in one bowl, and it only takes about 20 minutes. Try it for yourself and let me know what you think!

Chewy Oatmeal Chocolate Chip Cookies

Ingredients

  • 3/4 butter (room temperature)
  • 1 1/2 cup packed brown sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt (plus an additional sprinkle for the tops of the cookies)
  • 2 eggs
  • 1 1/4 tsp vanilla
  • 1 1/2 cup flour
  • 2 cups rolled oats
  • 1 cup chocolate chips (or more if you like chocolate as much as I do!)

Directions

  1. Preheat the oven to 375F and line two baking sheets with parchment paper.
  2. In a bowl, beat the butter with an electric mixer on medium for about 30 seconds.
  3. Add the sugar, baking powder, baking soda and salt and beat until combined. Make sure to stop and scrape the sides of the bowl so everything is evenly mixed.
  4. Add the two eggs and vanilla and beat until combined. Scrape the sides again.
  5. Beat in the flour. Depending on what mixer you’re using you may need to stop and continue by hand. I use a stand mixer and it all blends with no problem.
  6. Stir in the rolled oats and then mix in the chocolate chips.
  7. Drop by spoonfuls on to the prepared baking sheets and cook for 8 minutes.
  8. Take out of the oven and sprinkle with sea salt while they’re still warm.
